Open Feta Cheese and Tomato Omelet (Makes: 2 servings)
5 extra-large eggs Salt and pepper
2 tablespoons water
2 tablespoons chopped fresh basil 1 tablespoon chopped fresh mint
3 scallions, finely chopped
3 ounces reduced-fat feta cheese, crumbled
8 small cherry tomatoes, halved
Preheat broiler. Break the eggs into a bowl and beat lightly with a fork; season with salt and pepper. Add 2 tablespoons water, the basil, mint and scallions; mix briefly.
Spray a large ovenproof skillet with cooking spray. Pour in egg mixture and cook over medium heat for 4 to 5 minutes, pushing the mixture from the sides to the center of the pan with a spatula until the omelet is half cooked.
Top with the feta and the tomato halves, cut sides up; cook for 2 minutes. Slide pan under a preheated broiler and cook until light golden brown. Serve immediately.
