The Good Fat DietThere’re times when fat is actually good for you and it should be part of your diet.

New research shows that consuming fats, such as those found in oils and nuts, with vegetables helps aid the absorption of their valuable nutrients.

“Some nutrients found in vegetables are fat-soluble, which means they’re dissolved by fats,” says principal author Martha Clare Morris, Sc.D., of Chicago’s Rush University Medical Center.

Among those nutrients that get a boost: heart-healthy flavonoids and vitamin E.

While all types of fat provide the benefit, Dr. Morris recommends sticking with healthier unsaturated fats such as those found in canola oil and almonds.

Try tossing some walnuts into your salad, or dip cut-up veggies in an olive oil-based dressing for a healthy, satisfying snack. [source: Ladies' Home Journal]
