Gluten free substitutions Instead of wheat spaghetti, try rice noodles. Instead of wheat crackers, go for rice cakes. Instead of a wheat tortilla, a lettuce wrap is always a good option. Just remember that a gluten-free diet can be heavy on carbohydrates. Do not assume that a gluten-free diet is a carb-free diet.
