Breakfast

Snack

1/2 English muffin with 1 tbsp. peanut butter – 161 calories

Lunch

6 oz. flounder poached with 1 tsp. olive oil and garlic, 1 large sweet potato – 401 calories. Asparagus (8 spears) – 26 calories.

Snack

A handful of almonds and dried cranberries – 118 calories.

Dinner

6 oz. lemon rosemary chicken over 1 ½ cups wild rice – 529 calories. 1 cup roasted Brussels sprouts, 1 tsp. olive oil – 96 calories.

Dessert

3/4 cup whipped low-fat cottage cheese with almond extract, 2 tsp. honey and 3 tbsp. pecans – 308 calories.
