Lean Protein Foods

Continued from Wild Game Meat.
When it comes to lean protein foods, there are many choices to choose from, but they are a bit boring, don’t you think? Why not try something different and arguably more nutritious than, say, skinless chicken breast? Try these lean sources of protein:
Venison The name commonly given to deer meat, venison is nutritionally more dense than beef, chicken or pork. It is a deeply colored meat which is best served rare or medium rare.
Bison Bison is similar in flavor to beef tenderloin, but bison has a higher protein content and less fat and calories than beef. I have preached the value of increasing your EFA intake and eating bison is one way to do it since it is rich in essential fatty acids. This meat must be served rare or medium rare.
Elk This meat is high in protein and iron. It is a very lean meat so it is tricky to cook without having it turn tough and rubbery. Go easy on the cooking or use it in a slow cooker to ensure a juicy meal.
The bottom line: Lean protein foods are awesome; just remember to choose those that contain quality protein.
