Interesterified Oil (Fat) and Trans Fats
Many manufacturers are quietly replacing trans fats with interesterified oils. The problem: These man-made fats may be as hazardous as trans fats, according to new research.
Scientists at Brandeis University in Waltham, Massachusetts, found that interesterified oils can lower healthy HDL cholesterol and sabotage the body’s ability to use insulin, increasing blood sugar by 20 percent.
