You’ll find one of these gadgets at any kitchen-supply store and some supermarkets. To pit small stone fruit like a peach or plum, cut in half lengthwise, starting at the stem end.

Make sure the blade is touching the pit, cutting close and all the way around it.

Then, obviously, you need to separate; the key here is to twist halves in opposite directions. Use a melon baller to scoop out the pit. You can prep fruit this way for almost all desserts and fruit salads.
