Healthy Eating Recipe: Roasted Tomato Salad
I did not know that Microsoft is getting into “healthy eating recipe” business, but I do know that when it comes to eating healthy, Roasted Tomato Salad is one of my favorites.
What is so healthy about this healthy eating recipe? The taste is a given, besides that, it is one of the best ways to get lycopene, as well as fiber, and other nutrients contained in tomatoes.
20 minutes prep time. Serves 4.
12 large tomatoes
2 large or 4 small cloves garlic, finely chopped
2 Tbsp extra-virgin olive oil (or Canola oil)
12 large fresh basil leaves
Salt (optional) and freshly ground black pepper
Dressing
2 Tbsp extra-virgin olive oil
2 Tbsp balsamic vinegar (or lime/lemon juice)
Garnish
12 large fresh basil leaves
24 black olives
Per Serving: 202 Calories, 4 g Protein, 13 g Carbohydrates, 4 g Fiber, 17 g Total fat (2g sat, 12 g mono, 2 g poly).
