Hard-Boiled Eggs A common myth is you should avoid eggs because of their cholesterol content, but as recent research has shown, the “incredible, edible” food has received a bad rap.

A study from researchers at the University of Connecticut showed that eggs actually lower your low-density lipoprotein (LDL), or “bad” cholesterol, while raising the high-density lipoproteins (HDL), the good cholesterol.

In the study, when people ate three or more eggs daily, they produced high amounts of both LDL and HDL, which is important since other studies have shown that high amounts of LDL are less likely to contribute to clogging your arteries.

Eggs also provide a significant amount of protein to one’s diet, as well as various nutrients, including vitamins A, B6 and B12, to name a few. And nothing locks in those nutrients better than hard-boiling, regardless if you eat the yolks or not.
