The following recipe (makes 12 tamales) is fun and easy to make.
Ingredients: 36 corn husks, soaked in warm water until soft 1 pound fresh prepared masa (”masa preparada” already contains baking soda and fat for making tamales. This can be purchased at Mexican markets.)
1/2 pound jack cheese, cut into 1/2-inch-by-2 1/2-inch strips.
1 cup refried beans, optional.
Place the corn husks into boiling water and then weight down with a plate or lid to submerge completely – they will need to soak for a couple of hours or overnight. (more…)

Watermelon Tomato Gazpacho: 25 Minutes prep time, Serves 4.
3 c watermelon, seeded and pureed in a blender; 1 c seeded watermelon, diced small; 1 c seeded tomato, diced small (about 2 medium tomatoes); 1 c peeled, seeded cucumber, diced small; 1/2 c red or green bell pepper, diced small; 2 Tbsp lime juice.
1 small handful cilantro leaves; 1 tsp minced ginger; 1/2 small jalapeno, seeded and minced; 1 green onion, white and 1 inch of green, minced; 1 tsp sea salt; Freshly ground black pepper. (more…)
