Best Tomatoes

Best TomatoesThe results of a recent ten-year study show that the nutrient concentrations of tomatoes improve with organic production. Specifically, researchers noted a significant increase in the amount of the flavonoids quercetin and kaempferol.

Quercetin increased 79 percent, while kaempferol increased 97 percent in organic crops. Data suggests that the longer a field is organically farmed, the more nutritious the tomatoes.

Another study finds that tomatoes grown using organic fertilizer are not only higher in antioxidants — they also have comparable yields to conventionally grown tomatoes.

The soil benefits from organic management as well. It is richer and retains water more effectively than conventionally managed soil. [source: Taste for Life]
